Apricot Date Muffins
From nan's book. Dried apricots and dates soaked soft, buttermilk batter, hot oven.

Ingredients
- 1 cup dried apricots (chopped)
- ½ cup dates (chopped)
- 2 cups flour
- ¾ cup sugar
- 1 tsp baking soda
- ½ tsp salt
- ¼ cup oil
- ¼ cup melted butter
- 1 cup buttermilk
- 1 egg
Method
- Cover the apricots and dates with boiling water and let them soak 5 minutes. Drain well.
- Heat the oven to 400°F. Line or grease a 12 cup muffin tin.
- In one bowl, mix the flour, sugar, baking soda and salt.
- In a second bowl, whisk the oil, melted butter, buttermilk and egg.
- Add the dry mixture to the wet and stir just until it comes together.
- Fold in the drained apricots and dates.
- Spoon into the tin and bake 15 minutes, until the tops spring back.
Notes
Written in nan's book as: 1 cup apricots, 1/2 cup dates. Soak in boiling water for 5 min. 2 cups flour, 3/4 cup sugar, 1 tsp soda, 1/2 tsp salt, 1 bowl. 1/4 cup oil and 1/4 cup melted butter, 1 cup buttermilk, 1 egg, 1 bowl. Add dry mixture to wet. Add drained apricots and dates. Bake 400 for 15 minutes.
Her buttermilk trick, written at the bottom of the page: add 1 tbsp of vinegar to 1 cup milk, wait 5 min, stir.
No yield was written down. This much batter fills a standard 12 cup tin.
