Apricot Pecan Loaf

Ingredients
  • 2 cups flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • ¾ cup sugar
  • ¼ cup vegetable oil
  • 1 large egg
  • 1 tbsp vanilla
  • 2 tsp orange zest
  • 1 cup buttermilk
  • 1 cup chopped apricots
  • ½ cup pecans
Method
  1. Heat the oven to 350°F. Grease a 9 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt.
  3. In a large bowl, whisk the sugar, oil, egg, vanilla and orange zest.
  4. Stir in the flour mixture alternately with the buttermilk.
  5. Fold in the apricots and pecans.
  6. Bake in the 9 inch pan at 350°F for 45 to 55 minutes, until a pick comes out clean.
  7. Cool in the pan 10 minutes, then turn out onto a rack.

Written in nan's book as: 2 cups flour, 1 1/2 tsps b. powder, 1/2 tsp soda, 1 tsp salt, 3/4 cup sugar, 1/4 cup veg. oil, 1 large egg, 1 tbsp vanila, 2 tsps orange zest, 1 cup buttermilk, 1 cup chopped apricots, 1/2 cup pecans. Med bowl, whisk together flour, b. powder, b. soda and salt. Large bowl, whisk sugar, oil, egg, vanila and orange zest. Stir in flour mixture alternately with buttermilk. Fold in apricots, pecans. Bake in 9 inch pan at 350 for 45 to 55 minutes.

A tablespoon of vanilla is what she wrote, not a teaspoon.

Her buttermilk trick from another page: add 1 tbsp of vinegar to 1 cup milk, wait 5 min, stir.
