Banana Bread

Ingredients
  • 1 cup sugar
  • ½ cup oil
  • 2 eggs (beaten)
  • 3 large ripe bananas (mashed)
  • 2 cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp baking powder
  • cup orange juice
Method
  1. Heat the oven to 350°F. Grease a loaf pan.
  2. Beat the sugar and oil together. Add the eggs and the mashed bananas and beat well.
  3. Mix the flour, baking soda, salt and baking powder in a separate bowl.
  4. Add the dry mixture to the banana mixture along with the orange juice. Mix well.
  5. Pour into the pan and bake 55 minutes to 1 hour, until a pick comes out clean.
  6. Cool in the pan 10 minutes, then turn out onto a rack.

Notes

Written in nan's book as: 1 cup sugar, 1/2 cup oil, 2 eggs (beaten), 3 large ripe bananas mashed, 2 cups flour, 1 tsp baking soda, 1/2 tsp salt, 1/2 tsp baking powder, 1/3 cup orange juice. Beat sugar, oil, add eggs and bananas, beat well. Mix flour, soda, salt and b. powder. Add to banana mixture with orange juice. Mix well. Bake 350 for 55 minutes to 1 hour.

The orange juice is what makes this one hers. Do not swap it for milk.

No pan size was written down. A standard 9 by 5 loaf pan takes the full hour.
