Banana Tea Bread

The older banana loaf, creamed shortening and sugar instead of oil, three or four bananas in it.

Ingredients
  • 1 ¾ cups flour
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • cup shortening
  • cup sugar
  • 2 eggs (well beaten)
  • 3 or 4 large ripe bananas (mashed)
Method
  1. Sift together the flour, baking powder, soda and salt.
  2. Beat the shortening until creamy. Add the sugar gradually and continue beating until light and fluffy.
  3. Add the eggs and beat well.
  4. Add the flour mixture alternately with the bananas, a small amount at a time, beating after each addition until smooth.
  5. Turn into a well greased pan, 8 1/2 by 4 1/2.
  6. Bake at 350 for 1 hour 10 minutes.

Notes

A different loaf from the Banana Bread already on the site. That one uses oil and orange juice, this one creams shortening and sugar.
