Christmas Morning Cranberry Muffins

Chopped cranberries tossed in sugar, orange juice and peel in the batter, pecans folded in.

Ingredients
  • 1 cup cranberries
  • ¼ cup white sugar (for the berries)
  • 1 ½ cups flour
  • ¼ cup white sugar
  • 2 tsp baking powder
  • salt
  • ½ tsp cinnamon
  • ¼ tsp allspice
  • 1 beaten egg
  • ¼ tsp grated orange peel (optional)
  • ¾ cup orange juice
  • cup melted butter
  • ¼ cup chopped pecans or walnuts
Method
  1. Coarsely chop the cranberries. Sprinkle with 1/4 cup sugar and set aside.
  2. In a bowl stir together the flour, 1/4 cup sugar, baking powder, salt, cinnamon and allspice, and make a well in the centre.
  3. Combine the egg, orange peel, orange juice and melted butter.
  4. Add all at once to the flour mixture, stirring to moisten.
  5. Fold in the cranberry mixture and the nuts.
  6. Fill greased muffin cups and bake at 375 for 15 to 20 minutes.

Notes

Salt is in her method but she never wrote an amount in the list. Half a teaspoon suits this much flour.
