Christmas Morning Cranberry Muffins
Chopped cranberries tossed in sugar, orange juice and peel in the batter, pecans folded in.

Ingredients
- 1 cup cranberries
- ¼ cup white sugar (for the berries)
- 1 ½ cups flour
- ¼ cup white sugar
- 2 tsp baking powder
- salt
- ½ tsp cinnamon
- ¼ tsp allspice
- 1 beaten egg
- ¼ tsp grated orange peel (optional)
- ¾ cup orange juice
- ⅓ cup melted butter
- ¼ cup chopped pecans or walnuts
Method
- Coarsely chop the cranberries. Sprinkle with 1/4 cup sugar and set aside.
- In a bowl stir together the flour, 1/4 cup sugar, baking powder, salt, cinnamon and allspice, and make a well in the centre.
- Combine the egg, orange peel, orange juice and melted butter.
- Add all at once to the flour mixture, stirring to moisten.
- Fold in the cranberry mixture and the nuts.
- Fill greased muffin cups and bake at 375 for 15 to 20 minutes.
Notes
Salt is in her method but she never wrote an amount in the list. Half a teaspoon suits this much flour.
