Christmas Pudding

From nan's book, in her older cursive hand. Molasses, bread crumbs and mixed fruit, steamed two and a quarter hours.

Ingredients
  • 1 cup flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp cloves
  • ½ tsp nutmeg
  • ½ tsp mixed spice
  • ½ cup raisins
  • 1 ¼ cups mixed fruit
  • ½ cup butter
  • ¾ cup bread crumbs
  • ½ cup molasses
  • ½ cup milk
Method
  1. Grease a pudding bowl or mould well.
  2. Mix the flour, baking powder, baking soda, spices and bread crumbs in a large bowl.
  3. Cream the butter, then stir in the molasses and the milk.
  4. Add the dry mixture to the wet and stir until combined. Fold in the raisins and mixed fruit.
  5. Spoon into the bowl, leaving room at the top. Cover tightly with greased foil or a cloth and tie it down.
  6. Steam 2 1/4 hours, topping up the water in the pot as it boils away.
  7. Turn out and serve hot with the sauce for puddings.

Notes

Written in nan's book as: 1 cup flour, 1 tsp baking powder, 1/4 tsp soda, 1/2 tsp cinnamon, cloves, nutmeg and spice, 1/2 cup raisins, 1 1/4 cup mixed fruit, 1/2 cup butter, 3/4 cup bread crumbs, 1/2 cup mollass, 1/2 cup milk. Steam for 2 1/4 hrs.

The mixed fruit line is written tight and could read 1/4 cup rather than 1 1/4 cups. 1 1/4 is the amount that matches a pudding this rich.

Only the steaming time is written. Everything about mixing and covering is the ordinary method, filled in so the recipe works.
