Date Squares

Oats, coconut and butter pressed round a date filling. Half an hour at 350.

Ingredients
  • 2 cups flour
  • 2 cups rolled oats
  • 1 cup coconut
  • 1 cup butter
  • 1 cup brown sugar
  • 1 tsp vanilla
  • ½ pkg dates
  • ¼ tsp baking soda
Method
  1. Heat the oven to 350 and grease a square pan.
  2. Cook the dates with a little water and the baking soda until soft, then let them cool.
  3. Rub the butter into the flour, oats, coconut and brown sugar. Stir in the vanilla.
  4. Press half the crumb into the pan, spread the dates over, then press the rest of the crumb on top.
  5. Bake at 350 for 30 minutes.
