Ginger Bread

Four spices, a cup of molasses, a cup of boiling water at the end. The batter is meant to be thin.

Ingredients
  • 2 eggs
  • 1 cup sugar
  • 1 cup molasses
  • 1 cup Mazola oil
  • 1 tsp cloves
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp all spice
  • 2 tsp baking soda
  • 2 tbsp hot water
  • 2 cups flour
  • 1 cup boiling water
Method
  1. Place the eggs, sugar, molasses, oil and spices in a bowl and beat well.
  2. Dissolve 2 tsps baking soda in 2 tbsp of hot water and stir into the mixture.
  3. Then add 2 cups flour and beat well.
  4. Add 1 cup of boiling water and mix. The batter will be very thin.
  5. Pour into a tube pan and bake for 45 minutes at 350.

Notes

In pencil under the method: try 1/2 cup cocoa and 1 cup chocolate chips.
