Pancakes

From nan's book. She wrote the ingredients and nothing else, because she did not need the rest written down.

Ingredients
  • 1 ½ cups flour
  • 3 ½ tsp baking powder
  • 1 tbsp sugar
  • ½ tsp salt
  • 1 ¼ cups milk
  • 1 egg
  • 3 tbsp melted butter
  • 1 tsp vanilla (optional)
Method
  1. Mix the flour, baking powder, sugar and salt in a bowl.
  2. Whisk the milk, egg, melted butter and vanilla together.
  3. Pour the wet into the dry and stir until just combined. Lumps are fine.
  4. Heat a greased pan over medium. Pour in about 1/4 cup per pancake.
  5. Cook until bubbles come up through the middle and the edges look dry, then flip and cook another minute.

Notes

Written in nan's book as: 1 1/2 cups flour, 3 1/2 tsp baking powder, 1 TBS sugar, 1/2 tsp salt, 1 1/4 cups milk, 1 egg, 3 TBS melted butter, 1 tsp vanilla, opt.
