Pasta Shells

Jumbo shells stuffed with ricotta and cubed mozzarella, sauce under and over.

Ingredients
  • 2 cups ricotta cheese (1 container)
  • 1 ½ or 2 cups mozzarella cheese (cubed)
  • 1 egg
  • 1 tsp chopped or flaked parsley
  • ½ tsp salt
  • pepper (to taste)
  • jumbo shells
  • pasta sauce
  • parmesan cheese (optional)
Method
  1. Combine the ricotta, mozzarella, egg, parsley, salt and pepper. Mix the ingredients thoroughly.
  2. Boil the jumbo shells and rinse in cold water.
  3. In a shallow dish cover the bottom with pasta sauce.
  4. Fill the pasta shells with the cheese mixture and place in the dish.
  5. Pour the remaining sauce over the shells.
  6. Bake uncovered at 325 for 30 minutes.
  7. Sprinkle with parmesan cheese to taste, optional.
