Plain Muffins

From nan's book. Bananas, mayonnaise instead of oil and egg, berries or chocolate chips.

Ingredients
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 bananas (mashed)
  • 1 cup mayonnaise
  • 1 cup sugar
  • ¾ cup berries or chocolate chips
Method
  1. Heat the oven to 375°F. Line or grease a 12 cup muffin tin.
  2. In a bowl, mash the bananas. Stir in the mayonnaise and the sugar.
  3. Mix the flour, baking powder and baking soda into the wet ingredients. Stop as soon as it comes together, a lumpy batter makes a lighter muffin.
  4. Fold in the berries or chocolate chips.
  5. Spoon into the tin and bake 25 minutes, until the tops spring back and a pick comes out clean.
  6. Cool in the tin 5 minutes, then turn out onto a rack.

Notes

Written in nan's book as: 2 cups flour, 1 tsp baking powder, 1 tsp soda. In bowl mash 3 bananas, 1 cup mayo, 1 cup sugar. Mix flour and wet ingredients. Add 3/4 cup berries or chocolate chips. Bake 375 for 25 minutes.

The mayonnaise is not a typo. It is oil and egg already beaten together, and it is what keeps these tender.

She called them Plain Muffins. They are banana muffins.

No yield was written down. This much batter fills a standard 12 cup tin.
