Plum Pudding

Ingredients
  • 1 cup butter or shortening
  • 1 cup brown sugar
  • 1 cup bread crumbs
  • 1 cup flour
  • 1 tsp baking powder
  • 1 cup currants
  • 1 cup raisins
  • 1 cup mixed fruit
  • ½ tsp nutmeg
  • ½ tsp cinnamon
  • ½ tsp allspice
  • ½ tsp cloves
  • 2 eggs (beaten)
  • ½ cup milk
  • ½ cup molasses
  • 1 tsp salt
Method
  1. Grease a pudding bowl or mould well.
  2. Mix the flour, bread crumbs, baking powder, spices and salt in a large bowl.
  3. Cream the butter and brown sugar. Beat in the eggs, then the milk and molasses.
  4. Add the dry ingredients to the wet and stir until well combined.
  5. Fold in the currants, raisins and mixed fruit.
  6. Spoon into the bowl, leaving room at the top. Cover tightly with greased foil or a cloth and tie it down.
  7. Steam 3 to 4 hours, topping up the water in the pot as it boils away.
  8. Turn out and serve hot with the sauce for puddings.

Notes

Written in nan's book as: 1 cup butter or shortening, 1 cup b. sugar, 1 cup bread crumbs, 1 cup flour, 1 tsp b. powder, 1 cup each currants, rasins, mixed fruit, 1/2 tsp each nutmeg, cinnamon, allspice, cloves, 2 eggs beaten, 1/2 cup milk, 1/2 cup molasses, 1 tsp salt? Mix dry ingredients and add wet ingredients. Stir till well combined. Steam 3 to 4 hours.

She crossed out powder and wrote soda dissolved in hot water and added last. Then at the bottom of the page she wrote: I used b. powder. So baking powder is what is listed here.

She wrote cherries above the mixed fruit line, and cloves squeezed in under the spices.

The molasses line originally said tbsp. She struck it out and wrote 1/2 cup.

The question mark after the salt is hers.
