Protein Oatmeal Cookies

From nan's book, one of the later pages. Oats and vanilla protein powder, sweetened with stevia or sugar.

Ingredients
  • 2 cups oats
  • 1 cup vanilla protein powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ cup stevia or 1/2 cup sugar
  • ½ cup melted butter
  • 2 tbsp melted butter
  • 2 eggs
  • 1 tsp vanilla
  • ½ cup raisins
  • ½ cup unsweetened applesauce
Method
  1. Heat the oven to 350°F. Line a sheet with parchment paper.
  2. In a large bowl, combine the oats, protein powder, baking powder, salt and sugar.
  3. Add the butter, eggs, vanilla and applesauce. Mix.
  4. Stir in the raisins.
  5. Roll into equal size balls, put on the parchment paper and flatten.
  6. Bake at 350°F for 10 to 12 minutes.

Written in nan's book as: 2 cups oats, 1 cup vanilla protein powder, 1 tsp b. powder, 1/4 tsp salt, 1/4 stevia or 1/2 cup sugar, 1/2 cup melted butter plus 2 tbsp melted butter, 2 eggs, 1 tsp vanilla, 1/2 cup rasins, 1/2 cup unsweetened sauce. Bake at 350 for 10 to 12 min. Large bowl combine oats, protein powder, b powder, salt and sugar. Add butter, eggs, vanilla and chocolate chips. Mix, roll in equal size balls. Put on parchment paper, flaten. Bake.

Her ingredient list says raisins, her method says chocolate chips. Either works, use one or the other or both.

Unsweetened sauce is applesauce.
