Sauce for Puddings
From nan's book. Brown sugar sauce, boiled until thick. This is what goes over the steamed puddings.

Ingredients
- 1 cup brown sugar
- 3 tbsp flour
- 2 cups boiling water
- dash salt
- 2 tbsp butter
- 2 tsp vanilla
Method
- Whisk the brown sugar and flour together in a saucepan so the flour does not lump.
- Pour in the boiling water with a dash of salt and whisk smooth.
- Boil until thickened, stirring.
- Take it off the heat and add the butter and the vanilla.
- Serve hot over steamed pudding.
Notes
Written in nan's book as: Boil until thickned: 1 cup brown sugar, 3 tbsp flour, 2 cups boiling water, dash salt. Add: 2 tbsp butter, 2 tsp vanilla.
This is the sauce for her Christmas Pudding and her Plum Pudding, both on this site.
It thickens more as it cools. If it goes too far, a splash of boiling water brings it back.
