White Fruit Cake

A pound of butter, red and green cherries, pineapple slices, three hours in a slow oven with a pan of water.

Ingredients
  • 1 ½ cups white sugar
  • 1 pkg mixed fruit
  • 5 eggs
  • 1 cup milk
  • 1 tsp vanilla
  • 1 tsp lemon
  • ¼ tsp salt
  • 4 cups flour
  • 1 lb butter
  • 1 cup nuts
  • 1 cup white raisins
  • 1 pkg red cherries
  • 1 pkg green cherries
  • 1 pkg pineapple slices
Method
  1. Have the butter at room temp. Clean the fruit and add flour to it.
  2. Cream the butter and sugar well.
  3. Add the eggs one at a time and beat well.
  4. Add the vanilla, then the dry ingredients alternately with the milk, beginning and ending with flour.
  5. Mix about 3 minutes. Add the fruit and nuts and fold in.
  6. Put in a tube pan and bake for 3 hours at 275.
  7. Put a pan of cold water in the oven to keep the cake moist.
